Step 1: Preparation (Chitting)
Timeline: Week -2 to 0
Before digging in, place your seed potatoes in a cool, bright spot (indirect light) indoors. This process, called 'chitting', encourages strong sprouts. In Dubai's warm climate, avoid direct window heat.
Step 2: Choosing Containers
Timeline: Week 0
Select 40-50 liter felt grow bags. Felt is superior for Dubai as it breathes, releasing excess heat and preventing root rot. Ensure you have a sunny spot on your balcony or garden.
Step 3: Soil Mix
Timeline: Week 0
Do not use local garden sand. Create a mix of high-quality potting soil (60%), compost (30%), and perlite (10%) for drainage. Potatoes love loose, airy soil to expand easily.
Step 4: Planting
Timeline: Week 0
Roll down the sides of the bag. Fill 4 inches of soil at the bottom. Place 3-4 seed potatoes evenly spaced, sprouts facing UP. Cover with another 4 inches of soil.
Step 5: Watering Routine
Timeline: Weeks 1-2
Water deeply immediately after planting. In UAE weather, check moisture daily. The soil should feel like a squeezed sponge—moist, but not dripping wet. Do not let the bag dry out completely.
Step 6: Hilling Up
Timeline: Weeks 3-5
When green shoots are 6-8 inches tall, add more soil to the bag until only the top leaves are visible. Unroll the bag sides as you go. This encourages more tubers to grow along the buried stems.
Step 7: Maintenance
Timeline: Weeks 6-10
Potatoes are hungry. Apply an organic liquid fertilizer every 2 weeks. Ensure they get full morning sun, but if temperature spikes, afternoon shade helps prevent heat stress in containers.
Step 8: Watch for Signs
Timeline: Weeks 10-12
You may see flowers (some varieties bloom, some don't). Once the foliage begins to yellow and flop over, the plant is signaling that energy is moving to the tubers. Reduce watering.
Step 9: Withering & Curing
Timeline: Week 13
Stop watering completely. Allow the plant vines to die back and turn brown. Wait at least 10-14 days after the plant dies before harvesting. this thickens the potato skin for storage.
Step 10: The Harvest
Timeline: Week 14+
The best part. Dump the bag onto a tarp or plastic sheet. Sift through the dry soil with your hands (no tools!) to find your potatoes. Brush them off, but don't wash until you are ready to cook.
